About Our Mexico Cristal — Washed Single Origin

Historically, Mexican coffee has been viewed as an inexpensive, low grade blending coffee. This washed lot comes from our green coffee sourcing partner who aim to change this by sourcing only the best quality cherries from the renowned growing regions of Veracruz, Oaxaca and Chiapas. The contributing smallholder farms tend to be between 1-5 hectares; where the indigenous communities strongly influence traditional growing practices, steering away from mechanical processes and chemical fertilisers. Typical washing processes are used in this lot; cherries are depulped the same day as harvest, fermented for 12-18 hours in tanks, before being washed and dried on patios and raised beds.

Veracruz, Oaxaca & Chiapas — Mexico's Hidden Coffee Heartlands

Mexico has long been underestimated as a coffee origin — historically viewed as a source of cheap blending coffee rather than fine specialty lots. But the highlands of Veracruz, Oaxaca and Chiapas tell a very different story. Here, coffee is grown at altitudes between 1,000 and 1,800 metres above sea level, where cooler temperatures slow the cherry development and build complexity in the cup.

The contributing farms are small — typically between 1 and 5 hectares — and are largely managed by indigenous communities who have farmed this land for generations. These farmers steer away from mechanical processing and chemical fertilisers, instead relying on traditional knowledge and methods that work in harmony with the surrounding landscape. The result is coffee with real character and genuine provenance.

Our green coffee sourcing partner works directly with these communities, selecting only the best quality cherries from the most renowned growing areas. It is a relationship built on transparency and shared values — ensuring that every bag of Mexico Cristal supports the farmers and the traditions behind it.
