From the Slopes of the Santa Ana Volcano
This washed lot comes from the Borbollon mill in the Apaneca region of El Salvador, on the slopes of the Santa Ana volcano. Owned by the Alvarez family, the mill works with surrounding farms and specialises in meticulous wet processing. Cherries are washed and floated to separate screen sizes, then pulped and fermented overnight. After fermentation they are washed again and dried slowly on raised beds — a process that produces the clean, layered clarity and stone fruit character that defines this lot.

El Salvador is one of the smaller specialty coffee origins but one of the most consistent. The country's western highlands — particularly the Apaneca-Ilamatepec mountain range — produce coffees with remarkable clarity and sweetness, shaped by volcanic soils, reliable rainfall and altitudes between 1,200 and 1,600 metres.
The Santa Ana volcano, the highest point in El Salvador, creates ideal growing conditions on its slopes. The combination of rich volcanic soil, moderate temperatures and the Alvarez family's careful stewardship at the Borbollon mill results in a fully washed coffee with clean, layered complexity that's hard to achieve at lower altitudes.
