About Our Colombia Dulima — Washed Single Origin
This washed lot comes from our green coffee partner Covoya Coffee, who work with smallholder farms in the Huila subregion of southern Colombia. Dulima was named for the native Pijaos communities, who called the local Tolima Volcano "Dulima", meaning Snow Queen. The Huila region now accounts for 18% of Colombia's coffee production, where the high altitudes and rich volcanic soil create an ideal climate for the cultivation of high quality Castillo and Cattura beans. Covoya has worked on the ground with farmers from the municipalities of Pitalito, Gigante, San Augustin, La Plata, Paicol and Acevado to source strictly Excelso EP grade crops of screen size 17/18, highlighting the region's specialty coffee growing potential.
Huila, Colombia — Coffee Grown Beneath the Snow Queen
Huila sits in southern Colombia, where the Andes split into steep ridges and deep river valleys. Farms here climb to 1500–2000 Masl, and the rich volcanic soils left behind by the region's mountains give the coffee its depth and sweetness. Huila now accounts for around 18% of all Colombian coffee production, and the combination of altitude, soil and reliable rainfall has made it one of the country's most celebrated specialty growing regions.
Dulima takes its name from the native Pijaos communities, who called the local Tolima Volcano "Dulima" — the Snow Queen. The coffee is sourced through our green coffee partner Covoya Coffee, who work on the ground with smallholder farmers across the municipalities of Pitalito, Gigante, San Augustin, La Plata, Paicol and Acevado. Rather than buying by volume, Covoya selects strictly Excelso EP grade crops of screen size 17/18 — a tight specification that keeps the bean size even and the cup consistent.
The lot is made up of Castillo and Cattura varietals, both well suited to Huila's altitude and widely planted across the region for their cup quality and disease resistance. The cherries are processed using the washed method, which strips the fruit away before drying and produces the clean, sweet, well-defined cup Colombia is known for — here showing red berries, smooth caramel and rich milk chocolate.
