Local vs. National Suppliers
National suppliers offer scale and brand recognition. They also offer standardised products, longer supply chains, and typically slower response times when problems arise. Coffee roasted in a large production facility in Manchester and delivered to Devon via a national distribution network has typically been in transit for 1-2 weeks before it reaches you.
Local roasters in Devon and Somerset offer fresher coffee (roasted within days, not weeks), responsive service, direct relationships, and a local provenance story that resonates with guests. The trade-off is that smaller operations may have less range and less pricing flexibility on very large volumes.
The Freshness Advantage
Coffee is at its best within 4-6 weeks of roasting. Beyond that, the flavour profile flattens and the CO2 outgassing that produces crema in espresso reduces. Most national supplier coffee arrives with 2-4 weeks of its 4-6 week prime window already used.

Pricing: What's Reasonable
Specialty-grade wholesale coffee in the UK typically runs £14-22 per kg. At 18g per double shot, a kilogram produces approximately 55 shots. Your coffee cost per double shot should run £0.25-0.40. At a £3.50 selling price, that's an 8-11% pour cost — healthy for a coffee programme.
Be cautious of very low per-kilogram pricing. Below £12/kg for claimed specialty coffee, either the quality grade is commercial rather than specialty, or the price is subsidised by a tied equipment agreement that recovers the cost elsewhere.
