Coffee Trends Shaping Hospitality in 2026

The UK hospitality coffee market is evolving rapidly. Guests are more informed, more demanding, and more willing to pay for quality than at any point in the sector's history. For operators who stay ahead of the trends, coffee is an increasingly powerful revenue driver.

Premiumisation

Research shows that 69% of hotel guests prefer a premium coffee experience over a standard one — and are willing to pay a price premium for it. The same pattern holds across restaurants, cafes, and corporate hospitality. Premium coffee signals quality and attention to detail in a way that guests associate with the overall venue.

Premiumisation doesn't necessarily mean complex or experimental. It means fresh, well-extracted, consistently served coffee with a clear provenance story. A single origin from Ethiopia with a known farm and processing method is a premium offering. A branded pod from a supermarket own-label supplier is not.

Functional Beverages

The functional beverage trend is crossing into coffee territory. Adaptogens, mushroom extracts, and collagen additions are appearing in coffee menus at premium venues. Whilst the science on many of these is mixed, the consumer appetite is real and growing.

More immediately practical: oat milk, almond milk, and other plant-based options are now a baseline expectation rather than a premium add-on. Having multiple quality dairy alternatives is table stakes for 2026 hospitality.

Sustainability and Traceability

Guests — particularly the under-40 demographic — actively seek venues that align with their values. Coffee with a clear sustainability story (Fairtrade, Organic, Rainforest Alliance, or direct trade with documented farmer relationships) provides a genuine talking point and differentiator.

The EU Deforestation Regulation, coming into full effect in 2026, also means that supply chain transparency is shifting from a nice-to-have to a compliance requirement. Switching to a supplier who can provide this documentation now is good risk management.

The Filter Coffee Revival

Speciality filter coffee — batch brew, pour-over, AeroPress — is becoming a standard expectation at quality venues. For hospitality operators, batch brew is particularly compelling: it produces 12 cups of excellent filter coffee in under 6 minutes, scales easily for service, and opens up a separate menu item at a 60–80% margin.
