This fully washed lot comes from the Valle del Cauca region of western Colombia; which is home to the fertile Cauca River valley and parts of the Andes mountain range, which helps to create diverse microclimates suitable for coffee cultivation. This particular lot is classed as an Excelso EP grade coffee. Excelso is the screen size, where larger beans create a consistent lot, and EP stands for European Preparation, meaning the beans have been hand sorted for impurities and defects. The fully washed process for this lot employs traditional wet mill methods; harvesting beans when fully ripe, depulping to remove the mucilage, and then carefuly washed and dried under the sun or mechanical dryers. The small holder farms that contribute to this lot come from the highland municipalities of Sevilla, Trujillo and Cartago.
