This lot comes from the Emerald Haven plantation; a 280 acre plantation in Karnataka India.

Emerald Haven has been operating for 15 years, working with the community to help build schools and temples. Biligiriranga Hills means ‘White Hills’ in the local language, Kannada refers to the white rock face on one of the largest hills crowned with a temple of Lord Vishnu. Located where the Eastern and Western Ghats meet, this is a highly protected area home to Sathyamanglam Wildlife Sanctuary, which hosts a huge diversity of fauna and flora and has been home to a Tiger reserve since 2011. This specialty lot consists of cherries that are pulped to retain 40-50% mucilage, which then undergo Honey Anaerobic fermentation until optimum PH levels are reached, then dried for 15-20 days on raised beds.
