La Manuela Estate lies in the Region of Caldas, close to the small town of Aranzazu.
150 Small holder farms contribute to La Manuela Estate, where the coffee is collected by the employees, weighed, then transported via truck to the local wetmill. From here it is put through a desmucilaginador to extract the honey, allowing it to bypass the more traditional fermentation process. Finally the coffee is dried by the sun or in a heating chamber, then sampled and analyzed by the wetmill employees for humidity and bean size in order to achieve its “ Supremo” grade. Supremo grade is one of the highest grades for Colombian coffee, featuring a screen size of 17-18, meaning a more uniform and larger coffee bean than lower grades.
