Huehuetanango is a large state in Guatemala where coffee is grown in the mountainous highlands to the north and west of its capital city;

Also called Hueuetanango. Jabiru, named after one of the largest birds in the Americas, is an SHP EP grade coffee from the Union Cantinil municipality located within Hueuetanango. This regional lot is made up from small holder farms averaging 1.5 hectares in size who contribute to the local washing and buying station in the heart of Union Cantinil. The high altitude beans are picked and then put through a manual pulper, left to ferment overnight and then washed in special irrigation channels. They are then sun dried which is difficult in the mountainous region so the growers make use of every rooftop, patio and flat space to dry the beans. The regional varietels of Bourbon, Cattura and Paches contribute to this high quality cup.
