In the town of Aserri, Costa Rica is the Roble Negro Micromill, run by Jorge Vasquez Urena. Founded in 2019 the Micromill is famous for its high standards and sustainability practices; repurposing waste products into fertilizers and reducing its reliance on non renewables. Roble Negro Micromill partners with local coffee growers to process microlots; such as Daniel Monge, third generation owner of the family run Finca Las Palomas. Finca Las Palomas specialises in red and yellow Catuai, but in recent years has expanded to grow Gesha and Villa Sarchi varietels as well. This particular lot of red Catuai underwent pulping and fermentation in tanks for 36-40 hours, before being fully washed and dried on raised beds until it reached the desired 11% humidity.
