India is the world’s sixth largest coffee producer, behind Brazil, Vietnam, Indonesia, Colombia and Ethiopia, with a total production in 2014/15 of some 5.5 million bags. It exports around 70 percent of this - with exports of greens roughly split between 30 percent Arabica and 70 percent Robusta. This particular co ee from Kudremukh is a mountain range and name of a peak located in Chikkamagaluru District in Karnataka. Kudremukh is one of the 22 bio diversity Hotspots in the world (UNESCO) and a National Park in India. The Melkodige Estate is western facing, hot during the day with plummeting night temperatures due to moisture laden clouds from the sea. The coffee is picked after measuring brix content to ensure a high concentration of sugars. It is then pulped and washed thoroughly leaving no mucilage, then moved straight to drying beds. Coffee is slowly shade dried for the first few days to remove surface moisture and then spread in a thin layer over patio bricks and sun-dried slowly over a period of 7- 10 days.
